Yummy Potatoes (or Funeral Potatoes)

Ingredients

  • 2 lb frozen hash browns I like to use O'brien cubed potatoes
  • ½ cup melted butter
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup chopped onions not necessary if using O'brien potatoes
  • 1 10.5 oz can cream of mushroom soup can use cream of chicken
  • 2 cups sour cream
  • 2 cups grated cheddar cheese sharp or medium
  • 2-3 cups corn flakes

Instructions

  • Hash browns should be half thawed.
  • Preheat oven to 350
  • Add grated cheese, onions, salt, pepper, soup, sour cream and about ¼ c butter into a large bowl.
  • Mix thoroughly. 
  • add hash browns and mix.
  • Spray a 9 x 13 baking dish. 
  • Spread potato mixture evenly in pan. 
  • Top with corn flakes
  • pour remaining butter over top of corn flakes.
  • Bake @ 350º for 1 hr
