Yummy Sweet Potatoes

Ingredients

  • 5 sweet potatoes
  • ¼ tsp salt
  • ½ cup sugar
  • ¼ cup butter
  • 2 Tbsp heavy cream
  • 2 eggs
  • 1 tsp vanilla
  • ½ tsp cinnamon

Topping

  • ¼ cup butter
  • 3 Tbsp flour
  • ¾ cup brown sugar
  • ½ cup chopped walnuts

Instructions

  • Bake sweet potatoes 35 min. @ 375º-cool slightly, peel and mash.
  • add all remaining ingredients (excluding Topping) to mashed potatoes
  • place into a 9x13 baking dish
  • Put "Topping" ingredients into a blender and blend until coarse.
  • Sprinkel over dish.
  • Bake for 30 min. @350
