Remove roast from fridge 2 – 3 hours before cooking to get it to room temperature. Set oven rack on lowest position and preheat oven to 200 degrees.
Warm roasting pan on two stove top burners at med-high heat. Brown roast on all sides using a little oil. Place on a wire rack in a roasting pan. Salt and pepper generously.
Place in the oven and cook until the internal temp. is 130 degrees (medium-rare). About 3 ½ hours. 30 min. per pound. 140 degrees is Medium Well. Let stand for 20 minutes before carving.
