Add enough flour to make a stiff dough. Knead until smooth and form into a ball.
Let rest for 10 minutes.
Roll dough out very thin.
Let rest again for 10 to 20 minutes.
Slice into strips using pizza cutter or knife and allow to dry.

I lived with Grandma Emily May Ostler for two summers after high school graduation. She taught me to make these noodles for chicken noodle soup.I rarely let the noodles dry, I use them almost right away.
