Hambone Bean Soup

Ingredients
2⅓
cups
dry navy beans, well rinsed
1½
lbs
meaty ham bones or hocks
½
Tbsp
salt
½
Tbsp
pepper
1
onion, chopped
1
bay leaf
Instructions
Cover beans with 2 qt. water. Bring to a boil
Boil 2 min and remove from heat
Cover and let stand 1 hour
Add ham bone, onion, bay leaf, and seasoning.
Cover and heat to boiling.
Boil gently till beans are tender. About 3-4 hours.
Notes
I usually make this with the leftover ham from a big family dinner. I like pinto beans, but you can use whatever is your favorite bean.
