Fluffy Tapioca Pudding

Ingredients
3
eggs
divided
6
cups
milk
½
cup
tapioca
1
Tbsp
vanilla
1
cup
sugar
divided
Instructions
Mix tapioca, ½ cup sugar, milk and egg yolks in saucepan and let stand for 5 minutes.
In separate bowl, beat egg whites until foamy.
Gradually add ½ cup sugar, beating soft peaks. Set aside
Cook tapioca mixture on medium heat - stirring constant until mixture comes to a FULL boil.
Remove from heat. Quickly stir in beaten egg whites until blended.
Cool 20 min. Makes 9 cups pudding
