Cucumber (Oie) Kimchee

- 8 persian cucumbers I use the small english cucumbers
- ½ tsp salt
- 2 Tbsp minced garlic
- 4 green onion stalks
- 1 small onion
- 2 Tbsp Gochugara Red pepper paste
- 2 tsp sugar
- ¼ cup rice wine vinegar
- ¼ cup sesame oil
- sesame seeds
Cut cucumbers in large chunks.
Cut green onions in large bite size pieces. Do the same for the small onion
Add remaining ingredients
Refrigerate for at least 30 min. Best overnight
