Coconut Rice

Ingredients

cups
white or jasmine rice
1
can
coconut milk
2
cups
water
1
tsp
kosher salt
2-3
tsp
white sugar
splash of white vinegar
optional
1
bunch
chopped green onion tops for garnish
black pepper to taste
Instructions
Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil.
Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed.
Allow to stand for 5 minutes.
Add chopped green onion bottoms, pepper, add additional salt if necessary.
Garnish with green onion tops and serve immediately
