Crust:
- 1 cup flour
- 1 cup brown sugar or 3/4 cup for less sweet version
- salt
- 1 cup rolled oats
- 1 tsp baking soda
- ½ cup butter
Mix above ingredients until crumbly. Pat into a 9x13 baking dish. Bake 10 minutes at 350 degrees.
Topping:
- 1 cup brown sugar or 3/4 cup for less sweet version
- 2 eggs
- ½ tsp almond extract
- 2 Tbsp flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup coconut
- 1 cup well drained maraschino cherries chopped
- ½ cup pecan halves
Mix together everything except pecans and pour over the first mixture. Spread evenly with pecans. Bake for 25 minutes at 350 degrees. Ice with Cherry Almond Icing when cool
Cherry Almond Icing:
- 3 Tbsp soft butter
- 2 Tbsp cherry juice reserved from the maraschino cherry jar
- 2 cup powdered sugar
- ¼ tsp almond extract
Add more cherry juice if needed to make the icing the right consistency.
