Carrot Pudding

Ingredients
Pudding
1
cup
carrots
grated
1
cup
potatoes
grated
1
cup
butter
1
cup
sugar
1
tsp
baking soda
1
tsp
cinnamon
1
tsp
nutmeg
1
tsp
cloves
1
tsp
salt
1
cup
flour
raisins and nuts
as desired
Pudding Sauce
1
cup
brown sugar
1
cup
white sugar
1
cup
heavy whipping cream
1
cup
butter
1
tsp
vanilla
Instructions
Pudding
Mix all ingredients very well.
Fill quart jars about ¾ full. Put a new canning lid on each jar.
Steam for 2-3 hours in a hot water bath. Can use a canning pan or any type of deep pan.
Pudding Sauce
Add ingredients (minus the vanilla) into a saucepan and place over medium heat for 8-10 minutes, or until it coats the back of a spoon. Add vanilla
To Serve:
Warm pudding, place in bowls and top with warmed sauce.

This is one of Grandpa Lybbert's very favorite desserts! Very, very yummy!
