Basic Muffins

Ingredients

cups
flour
1/4
cup
sugar
1
tbsp
baking powder
1/2
tsp
salt
1
egg
beaten
1
cup
milk
Instructions
Heat oven to 400 degrees.
Spray muffin cups with non-stick spray.
Combine dry ingredients.
Add wet ingredients to dry ingredients and stir together until just moistened.
Fill muffin cups ⅔ full.
Bake at 400 degrees for ~20 minutes.
Options:
Stir in 1 c blueberries or diced fruit.
A half teaspoon cinnamon goes well with grated apples or diced peaches.
Place a teaspoon of jam on each muffin and press into batter before baking;
Sprinkle each muffin with finely chopped nuts.
Stir in 1 c of chocolate chips.
Add ½ c shredded cheese and maybe some diced ham.
Notes
Sprinkling a little sugar on top before baking makes them look like they came from the bakery! Be creative!
