Bacon-Cheddar Bites

Ingredients

pkg
premade pie crust
softened
8
slices
bacon
cooked & chopped into fine pieces
2
plum tomatoes
seeded & chopped fine
1
cup
cheddar cheese
grated
4
oz
cream cheese
softened
2
tsp
Dijon mustard
green onion
sliced
Additional chopped tomato (optional)
1
clove
garlic
pressed
Instructions
Preheat the oven to 400.
Unroll pie crusts onto lightly floured surface and cut into discs using a biscuit cutter. Press each disc into the well of a mini-muffin pan.
Bake for 8 to 10 minutes until golden brown.
Meanwhile, combine bacon, tomatoes, cheddar cheese, cream cheese, mustard & garlic and mix well.
Fill each pastry cup with about 1 tbsp of filling.
Bake for 5 to 7 minutes until the cheese is melted.
Garnish with green onions & tomatoes.

Abby and I went to a party and I had to tell her to QUIT eating all of these. She wouldn’t let me leave without getting the recipe.
