Wild Rice Soup

Ingredients

Saute:

  • 1 Tbsp minced onion
  • ¼ cup oil

Mix in:

  • ½ cup flour

Gradually add

  • 3 cups chicken broth or chicken bouillon & water

After liquids come to a boil, stir in:

  • 2 cups precooked wild rice
  • ½ cup diced cooked chicken
  • ½ cup finely chopped carrots
  • 3 Tbsp almonds, toasted optional
  • ½ tsp salt
  • ¼ tsp pepper

Blend in:

  • 1 cup milk
  • 1 Tbsp parsley or chives

Instructions

  • Simmer for 5 mins, then blend in the milk and add parsley or chives
