Wild Rice Soup
Ingredients
Saute:
- 1 Tbsp minced onion
- ¼ cup oil
Mix in:
- ½ cup flour
Gradually add
- 3 cups chicken broth or chicken bouillon & water
After liquids come to a boil, stir in:
- 2 cups precooked wild rice
- ½ cup diced cooked chicken
- ½ cup finely chopped carrots
- 3 Tbsp almonds, toasted optional
- ½ tsp salt
- ¼ tsp pepper
Blend in:
- 1 cup milk
- 1 Tbsp parsley or chives
Instructions
- Simmer for 5 mins, then blend in the milk and add parsley or chives
