Spiced Red Cabbage (German Version)

- ½ medium head red cabbage, diced
- 1 Tbsp vegetable oil
- ½ cup chopped onion
- 1 medium tart apple, quartered
- 3 Tbsp tarragon or red vinegar
- 1 Tbsp sugar
- 1 bay leaf
- 1 tsp salt
- ¼ tsp pepper
- ⅛ tsp ground cloves
Place cabbage in a large pan of boiling salted water; boil for 1 minute.
Drain, return to pan.
Stir in remaining ingredients.
Cover and simmer for 1 hour or until cabbage is tender and apples are completely cooked.
