Pineapple Cheesecake Squares

Crust:
- 1 cup flour
- ½ cup butter
- ½ cup sugar
Filling:
- 1 8 oz pkg cream cheese
- 2 Tbsp sugar
- 1 egg
- 1 tsp vanilla
- 1 can crushed pineapple drained
- 1 cup shredded coconut
- 1 Tbsp butter melted
Instructions
Crust
- Blend flour, butter and sugar. Do not over mix
- Press into 9×13" pan and bake at 350° for 10-13 minutes until it is brown.
Filling:
- Combine cream cheese, sugar, egg and vanilla until smooth.
- Fold in pineapple. Spread filling into pie crust
- Mix coconut and melted butter and sprinkle on top.
- Bake at 350° for 10-15 min more.
