Pat Perrenoud’s Huckleberry Cake

Ingredients

  • 1 cup butter
  • 2 cup sugar
  • 3 cup flour
  • 1 cup milk
  • 2 eggs
  • 1/4 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp soda
  • 2 tsp baking powder
  • 1 quart huckleberries dredged in 1/4 cup flour

Instructions

  • Mix together dry ingredients (not huckleberries)
  • Cream together sugar and butter. Add in eggs and milk
  • Mix dry ingredients into butter mixture
  • Add huckleberries last (put them in a ziplock bag first and coat them well with the flour
  • Pour cake into a greased 9×13 pan covered with parchement
  • Bake at 350 for 40 minutes

This is my friend, Pat’s recipe. It came from an old note card handed down in their family.  It is a family favorite of theirs.
