Paleo Sour Cream Substitute

Ingredients

  • 1 cup raw cashews
  • 1 lemon
  • 2 tsp apple cider vinegar
  • cup water
  • 1 tsp salt

Instructions

  • Place cashews in a bowl, cover with water and allow to soak at room temperature for approx. 3 hours. Drain and rinse with cold water
  • Place prepared cashews into a blender, add juice of 1 lemon, apple cider vinegar, water and salt. Blend until smooth
  • Place into an air tight container and keep refrigerated
