Harvest Apple Pumpkin Bread

- 3 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 ½ tsp salt
- 3 cups white sugar
- 1 15 oz pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- ½ cup apple juice (or water)
- 1 large apple peeled, cored & chopped
Instructions
- Preheat oven to 350°
- Grease and flour 2 bread pans
- Combine flour, cinnamon, baking soda and salt into a large bowl
- Combine sugar, pumpkin, eggs, vegetable oil and apple juice (or water) in a mixer bowl until just blended
- Add pumpkin mixture to flour until just moist
- Fold in the chopped apples
- Spoon batter into prepared loaf pans
- Bake 65-70 minutes or until toothpick comes out clean when inserted in the center
