Harvest Apple Pumpkin Bread

Ingredients

  • 3 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 ½ tsp salt
  • 3 cups white sugar
  • 1 15 oz pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • ½ cup apple juice (or water)
  • 1 large apple peeled, cored & chopped

Instructions

  • Preheat oven to 350°
  • Grease and flour 2 bread pans
  • Combine flour, cinnamon, baking soda and salt into a large bowl
  • Combine sugar, pumpkin, eggs, vegetable oil and apple juice (or water) in a mixer bowl until just blended
  • Add pumpkin mixture to flour until just moist
  • Fold in the chopped apples
  • Spoon batter into prepared loaf pans
  • Bake 65-70 minutes or until toothpick comes out clean when inserted in the center
