Parmesan Chicken Bowl

Ingredients

  • 1/2 cup Cottage Cheese
  • 2 oz Mozzarella grated
  • 1/4 cup Marinara
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Garlic Powder
  • Pinch of Salt
  • 1/2 cup Chicken cooked & diced
  • 1/2 Tbsp Bread Crumbs optional
  • 1 Tbsp Parmesan Cheese grated

Garnish:

  • Fresh Parsley
  • Basil
  • Red Pepper Flakes

Instructions

  • In a single-serving oven safe baking dish or ramekin, add cottage cheese, mozzarella, marinara, seasonings and mix until combined.
  • Stir in chicken.
  • Top with parmesan cheese and bread crumbs.
  • Bake at 375 for 15 minutes, then broil for 90 seconds.
  • Top with parsley, red pepper flakes and basil.
