Hambone Bean Soup

Ingredients

  • 2⅓ cups dry navy beans, well rinsed
  • lbs meaty ham bones or hocks
  • ½ Tbsp salt
  • ½ Tbsp pepper
  • 1 onion, chopped
  • 1 bay leaf

Instructions

  • Cover beans with 2 qt. water. Bring to a boil
  • Boil 2 min and remove from heat
  • Cover and let stand 1 hour
  • Add ham bone, onion, bay leaf, and seasoning.
  • Cover and heat to boiling.
  • Boil gently till beans are tender. About 3-4 hours.

Notes

I usually make this with the leftover ham from a big family dinner. I like pinto beans, but you can use whatever is your favorite bean.
