Hambone Bean Soup
Ingredients
- 2⅓ cups dry navy beans, well rinsed
- 1½ lbs meaty ham bones or hocks
- ½ Tbsp salt
- ½ Tbsp pepper
- 1 onion, chopped
- 1 bay leaf
Instructions
- Cover beans with 2 qt. water. Bring to a boil
- Boil 2 min and remove from heat
- Cover and let stand 1 hour
- Add ham bone, onion, bay leaf, and seasoning.
- Cover and heat to boiling.
- Boil gently till beans are tender. About 3-4 hours.
Notes
I usually make this with the leftover ham from a big family dinner. I like pinto beans, but you can use whatever is your favorite bean.
