Ham, Egg & Cheese Soup
Ingredients
- 6 eggs
- 2 large potatoes
- 1 cup cubed ham
- 2-3 cups half & half
- 1 cup grated cheddar cheese
- 1½ tsp seasoned salt
Instructions
- Peel & cut potatoes into bite size pieces add to large pot, place unboiled eggs into pot with potatoes. Boil till done.
- Peel hard boiled eggs.
- In a large pot combine ½ c butter and ½ c flour. Mix well.
- Add half-n-half and thicken, stirring constantly.
- Add grated cheese, stir till mixed in.
- If it becomes too thick add a little more half-n-half.
- Add seasoned salt, ham, cooked potatoes and cut up eggs into bite sized pieces and add to soup
