Ham, Egg & Cheese Soup

Ingredients

  • 6 eggs
  • 2 large potatoes
  • 1 cup cubed ham
  • 2-3 cups half & half
  • 1 cup grated cheddar cheese
  • tsp seasoned salt

Instructions

  • Peel & cut potatoes into bite size pieces add to large pot, place unboiled eggs into pot with potatoes. Boil till done.
  • Peel hard boiled eggs. 
  • In a large pot combine ½ c butter and ½ c flour.  Mix well. 
  • Add half-n-half and thicken, stirring constantly. 
  • Add grated cheese, stir till mixed in. 
  • If it becomes too thick add a little more half-n-half.
  • Add seasoned salt, ham, cooked potatoes and cut up eggs into bite sized pieces and add to soup
