Golden Mashed Potato Bake

Ingredients

  • 8 medium potatoes peeled & cubed
  • 8 oz cream cheese cubed
  • 2 eggs
  • 2 Tbsp flour
  • 2 Tbsp fresh parsley minced; or 2 tsp. dried parsley flakes
  • 2 Tbsp chives minced
  • 2 tsp salt
  • ¼ tsp pepper
  • 1 can (2.8) oz french fried onions

Instructions

  • Place potatoes in a large saucepan and cover with water and bring to a boil.   
  • Reduce heat; cover and simmer for 15-20 min or until tender and drain.
  • In a large bowl, beat the potatoes and cream cheese until smooth. 
  • Beat in the eggs, flour, parsley, chives, salt and pepper; mix well. 
  • Transfer to a greased 3 qt baking dish. 
  • Bake uncovered at 350 for 45 min.
  • Sprinkle with onions; bake 5-10 min longer or until golden brown.
