Fluffy Tapioca Pudding
Ingredients
- 3 eggs divided
- 6 cups milk
- ½ cup tapioca
- 1 Tbsp vanilla
- 1 cup sugar divided
Instructions
- Mix tapioca, ½ cup sugar, milk and egg yolks in saucepan and let stand for 5 minutes.
- In separate bowl, beat egg whites until foamy.
- Gradually add ½ cup sugar, beating soft peaks. Set aside
- Cook tapioca mixture on medium heat – stirring constant until mixture comes to a FULL boil.
- Remove from heat. Quickly stir in beaten egg whites until blended.
- Cool 20 min. Makes 9 cups pudding
