Cucumber Salad

Ingredients

  • 3 med/lg cucumbers cut into bite-sized pieces
  • ½ each green & red peppers sliced
  • cup diced chives
  • ¼ cup chopped fresh basil
  • ½ cup seasoned rice vinegar
  • Sprinkling of Salt
  • couple dashes garlic
  • 2 diced roma tomatoes optional

Instructions

  • Blend all ingredients in a bowl.
  • Chill at least 2 hrs or overnight
