Cucumber (Oie) Kimchee

Ingredients

  • 8 persian cucumbers I use the small english cucumbers
  • ½ tsp salt
  • 2 Tbsp minced garlic
  • 4 green onion stalks
  • 1 small onion
  • 2 Tbsp Gochugara Red pepper paste
  • 2 tsp sugar
  • ¼ cup rice wine vinegar
  • ¼ cup sesame oil
  • sesame seeds

Instructions

  • Cut cucumbers in large chunks.
  • Cut green onions in large bite size pieces. Do the same for the small onion
  • Add remaining ingredients
  • Refrigerate for at least 30 min. Best overnight
