Cucumber (Oie) Kimchee
Ingredients
- 8 persian cucumbers I use the small english cucumbers
- ½ tsp salt
- 2 Tbsp minced garlic
- 4 green onion stalks
- 1 small onion
- 2 Tbsp Gochugara Red pepper paste
- 2 tsp sugar
- ¼ cup rice wine vinegar
- ¼ cup sesame oil
- sesame seeds
Instructions
- Cut cucumbers in large chunks.
- Cut green onions in large bite size pieces. Do the same for the small onion
- Add remaining ingredients
- Refrigerate for at least 30 min. Best overnight
