Chicken and Edamame (Soy Beans)

Ingredients

  • 3 Tbsp soy sauce
  • ½ tsp ginger
  • 1 tsp honey
  • 2 tsp olive oil
  • lbs chicken cut into chunks
  • 1 cup frozen edamame (soy beans)
  • 2 medium stalks celery chopped
  • brown rice, cooked

Instructions

  • Combine soy sauce, ginger & honey.  Set aside. 
  • Heat oil & cook chicken for 3 minutes.  Add edamame and cook for another 3 minutes.  Add celery and cook for 2 minutes.  Add soy sauce mixture.  Cook for 2 minutes. 
  • Serve over brown rice.
