Carrot Pudding

Ingredients

Pudding

  • 1 cup carrots grated
  • 1 cup potatoes grated
  • 1 cup butter
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp salt
  • 1 cup flour
  • raisins and nuts as desired

Pudding Sauce

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup heavy whipping cream
  • 1 cup butter
  • 1 tsp vanilla

Instructions

Pudding

  • Mix all ingredients very well.
  • Fill quart jars about ¾ full. Put a new canning lid on each jar.
  • Steam for 2-3 hours in a hot water bath. Can use a canning pan or any type of deep pan.

Pudding Sauce

  • Add ingredients (minus the vanilla) into a saucepan and place over medium heat for 8-10 minutes, or until it coats the back of a spoon. Add vanilla

To Serve:

  • Warm pudding, place in bowls and top with warmed sauce.

Notes

This is one of Grandpa Lybbert’s very favorite desserts! Very, very yummy!
