Carrot Pudding
Ingredients
Pudding
- 1 cup carrots grated
- 1 cup potatoes grated
- 1 cup butter
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cloves
- 1 tsp salt
- 1 cup flour
- raisins and nuts as desired
Pudding Sauce
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup heavy whipping cream
- 1 cup butter
- 1 tsp vanilla
Instructions
Pudding
- Mix all ingredients very well.
- Fill quart jars about ¾ full. Put a new canning lid on each jar.
- Steam for 2-3 hours in a hot water bath. Can use a canning pan or any type of deep pan.
Pudding Sauce
- Add ingredients (minus the vanilla) into a saucepan and place over medium heat for 8-10 minutes, or until it coats the back of a spoon. Add vanilla
To Serve:
- Warm pudding, place in bowls and top with warmed sauce.
