Spiced Red Cabbage (German Version)

Ingredients

  • ½ medium head red cabbage, diced
  • 1 Tbsp vegetable oil
  • ½ cup chopped onion
  • 1 medium tart apple, quartered
  • 3 Tbsp tarragon or red vinegar
  • 1 Tbsp sugar
  • 1 bay leaf
  • 1 tsp salt
  • ¼ tsp pepper
  • tsp ground cloves

Instructions

  • Place cabbage in a large pan of boiling salted water; boil for 1 minute. 
  • Drain, return to pan. 
  • Stir in remaining ingredients. 
  • Cover and simmer for 1 hour or until cabbage is tender and apples are completely cooked. 
  • Remove Bay leaf
