Coconut Rice

Ingredients

  • 2 cups white or jasmine rice
  • 1 can coconut milk
  • 2 cups water
  • 1 tsp kosher salt
  • 2-3 tsp white sugar
  • splash of white vinegar optional
  • 1 bunch chopped green onion tops for garnish
  • black pepper to taste

Instructions

  • Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil. 
  • Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed. 
  • Allow to stand for 5 minutes. 
  • Add chopped green onion bottoms, pepper, add additional salt if necessary. 
  • Garnish with green onion tops and serve immediately
