Golden Mashed Potato Bake
Ingredients
- 8 medium potatoes peeled & cubed
- 8 oz cream cheese cubed
- 2 eggs
- 2 Tbsp flour
- 2 Tbsp fresh parsley minced; or 2 tsp. dried parsley flakes
- 2 Tbsp chives minced
- 2 tsp salt
- ¼ tsp pepper
- 1 can (2.8) oz french fried onions
Instructions
- Place potatoes in a large saucepan and cover with water and bring to a boil.
- Reduce heat; cover and simmer for 15-20 min or until tender and drain.
- In a large bowl, beat the potatoes and cream cheese until smooth.
- Beat in the eggs, flour, parsley, chives, salt and pepper; mix well.
- Transfer to a greased 3 qt baking dish.
- Bake uncovered at 350 for 45 min.
- Sprinkle with onions; bake 5-10 min longer or until golden brown.
