Basic Muffins

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg beaten
  • 1 cup milk

Instructions

  • Heat oven to 400 degrees.
  • Spray muffin cups with non-stick spray.
  • Combine dry ingredients.
  • Add wet ingredients to dry ingredients and stir together until just moistened.
  • Fill muffin cups ⅔ full.
  • Bake at 400 degrees for ~20 minutes.

Options:

  • Stir in 1 c blueberries or diced fruit.
  • A half teaspoon cinnamon goes well with grated apples or diced peaches.
  • Place a teaspoon of jam on each muffin and press into batter before baking;
  • Sprinkle each muffin with finely chopped nuts.
  • Stir in 1 c of chocolate chips.
  • Add ½ c shredded cheese and maybe some diced ham.

Notes

Sprinkling a little sugar on top before baking makes them look like they came from the bakery! Be creative!
