Marsha’s Muesli Bars

Course: Breakfast, Cookies & Bars

Ingredients

Lay these out in a 9×13 pan and toast them in a 325 degree oven. Stir every 5 minutes . 15 minutes total.

  • 1 cup rolled oats
  • 1 cup unsweetened coconut
  • 1/2 cup almonds chopped or slivered
  • 1/2 cup pecans

Bring to boil over medium heat and boil for 5 minutes

  • 1/2 cup butter
  • 1/2 cup honey

After done boiling add:

  • 1 cup dates chopped

Add to hot butter/date mixture after you take it from the stove.

  • 1 tsp vanilla I add a little more sometimes
  • 3/4 tsp almond extract

Then pour over the toasted ingredients Mix together and press into the 9×13 pan.

Instructions

  • Bake in 275 degree oven for 25 minutes. (I press them into the pan again after they cook)
  • Cool completely, then cut into pieces.

Notes

Marsha Leavitt brought these to Grandpa’s 90th birthday for a gift.  They are very good.  
She added this note:
I use a silicone mold to make them into bars.  They stay together much better that way.  I still press them in again after baking.  Then cool completely.
Bonus suggestion: A few chocolate chips on the top when they come out of the oven will melt and you can frost them with chocolate.
