Bran Muffins

Ingredients

  • 1 cup Boiling water
  • 2 1/2 cups flour
  • 1 cup bran flakes
  • 1/2 cup margarine
  • 1 tbsp baking powder
  • 1 cup brown sugar
  • 1/2 tsp salt
  • 1/2 cup white sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cup all-bran buds
  • 2 cups buttermilk

Instructions

  • Combine water & bran flakes and set aside.
  •  In large mixer bowl cream together butter, eggs & sugars.
  • Add buttermilk.
  • Sift together dry ingredients.
  •  Mix with egg & butter mixture
  • Add bran flakes, bran buds & vanilla.
  • Spray muffin tins liberally
  • Bake @ 400º for 15-20 min.

Notes

You can substitute buttermilk with 2 tablespoons lemon juice and regular milk equaling 2 cups.
You can store prepared muffin mix in the refrigerator for up to 6 weeks and bake as needed.
