Bran Muffins
Ingredients
- 1 cup Boiling water
- 2 1/2 cups flour
- 1 cup bran flakes
- 1/2 cup margarine
- 1 tbsp baking powder
- 1 cup brown sugar
- 1/2 tsp salt
- 1/2 cup white sugar
- 1 tsp vanilla
- 2 eggs
- 2 cup all-bran buds
- 2 cups buttermilk
Instructions
- Combine water & bran flakes and set aside.
- In large mixer bowl cream together butter, eggs & sugars.
- Add buttermilk.
- Sift together dry ingredients.
- Mix with egg & butter mixture
- Add bran flakes, bran buds & vanilla.
- Spray muffin tins liberally
- Bake @ 400º for 15-20 min.
Notes
You can substitute buttermilk with 2 tablespoons lemon juice and regular milk equaling 2 cups.
You can store prepared muffin mix in the refrigerator for up to 6 weeks and bake as needed.
