Carrot Cookies
Ingredients
- 1 cup shortening (no substitutes)
- 1 cup sugar
- 2 cups flour
- 2 eggs
- 1 tsp baking powder
- 1 cup cooked, mashed carrots
Frosting:
- 3/4 cup powdered sugar
- 2 tbsp orange juice
- 2 tbsp butter
Instructions
- Cream shortening & sugar.
- Add eggs and mix well.
- Add baking powder & flour.
- Add carrots.
- Drop on ungreased cookie sheet & bake @ 350 for 12 to 15 minutes.
- Frost while hot.
