Carrot Cookies

Course: Candies & Sweets, Cookies & Bars

Ingredients

  • 1 cup shortening (no substitutes)
  • 1 cup sugar
  • 2 cups flour
  • 2 eggs
  • 1 tsp baking powder
  • 1 cup cooked, mashed carrots

Frosting:

  • 3/4 cup powdered sugar
  • 2 tbsp orange juice
  • 2 tbsp butter

Instructions

  • Cream shortening & sugar.
  • Add eggs and mix well.
  • Add baking powder & flour.
  • Add carrots.
  • Drop on ungreased cookie sheet & bake @ 350 for 12 to 15 minutes.
  • Frost while hot.

This recipe came from my mother-in-law, Sandy Hansen and is Nathan’s favorite cookie.
