Bacon-Cheddar Bites

Ingredients

  • 1 pkg premade pie crust softened
  • 8 slices bacon cooked & chopped into fine pieces
  • 2 plum tomatoes seeded & chopped fine
  • 1 cup cheddar cheese grated
  • 4 oz cream cheese softened
  • 2 tsp Dijon mustard
  • green onion sliced
  • Additional chopped tomato (optional)
  • 1 clove garlic pressed

Instructions

  • Preheat the oven to 400.
  • Unroll pie crusts onto lightly floured surface and cut into discs using a biscuit cutter.  Press each disc into the well of a mini-muffin pan. 
  • Bake for 8 to 10 minutes until golden brown.
  • Meanwhile, combine bacon, tomatoes, cheddar cheese, cream cheese, mustard & garlic and mix well.
  •  Fill each pastry cup with about 1 tbsp of filling.
  • Bake for 5 to 7 minutes until the cheese is melted.
  • Garnish with green onions & tomatoes.

Notes

Abby and I went to a party and I had to tell her to QUIT eating all of these. She wouldn’t let me leave without getting the recipe.
