Bacon-Cheddar Bites
Ingredients
- 1 pkg premade pie crust softened
- 8 slices bacon cooked & chopped into fine pieces
- 2 plum tomatoes seeded & chopped fine
- 1 cup cheddar cheese grated
- 4 oz cream cheese softened
- 2 tsp Dijon mustard
- green onion sliced
- Additional chopped tomato (optional)
- 1 clove garlic pressed
Instructions
- Preheat the oven to 400.
- Unroll pie crusts onto lightly floured surface and cut into discs using a biscuit cutter. Press each disc into the well of a mini-muffin pan.
- Bake for 8 to 10 minutes until golden brown.
- Meanwhile, combine bacon, tomatoes, cheddar cheese, cream cheese, mustard & garlic and mix well.
- Fill each pastry cup with about 1 tbsp of filling.
- Bake for 5 to 7 minutes until the cheese is melted.
- Garnish with green onions & tomatoes.
