Fluffy Tapioca Pudding

- 3 eggs divided
- 6 cups milk
- ½ cup tapioca
- 1 Tbsp vanilla
- 1 cup sugar divided
Mix tapioca, ½ cup sugar, milk and egg yolks in saucepan and let stand for 5 minutes.
In separate bowl, beat egg whites until foamy.
Gradually add ½ cup sugar, beating soft peaks. Set aside
Cook tapioca mixture on medium heat – stirring constant until mixture comes to a FULL boil.
Remove from heat. Quickly stir in beaten egg whites until blended.
Cool 20 min. Makes 9 cups pudding
