Fluffy Tapioca Pudding

Ingredients

  • 3 eggs divided
  • 6 cups milk
  • ½ cup tapioca
  • 1 Tbsp vanilla
  • 1 cup sugar divided

Instructions

  • Mix tapioca, ½ cup sugar, milk and egg yolks in saucepan and let stand for 5 minutes.
  • In separate bowl, beat egg whites until foamy.
  • Gradually add ½ cup sugar, beating soft peaks. Set aside
  • Cook tapioca mixture on medium heat – stirring constant until mixture comes to a FULL boil.
  • Remove from heat. Quickly stir in beaten egg whites until blended.
  • Cool 20 min. Makes 9 cups pudding
