Pineapple Cheesecake Squares

Ingredients

Crust:

  • 1 cup flour
  • ½ cup butter
  • ½ cup sugar

Filling:

  • 1 8 oz pkg cream cheese
  • 2 Tbsp sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 can crushed pineapple drained
  • 1 cup shredded coconut
  • 1 Tbsp butter melted

Instructions

Crust

  • Blend flour, butter and sugar. Do not over mix
  • Press into 9×13" pan and bake at 350° for 10-13 minutes until it is brown.

Filling:

  • Combine cream cheese, sugar, egg and vanilla until smooth.
  • Fold in pineapple. Spread filling into pie crust
  • Mix coconut and melted butter and sprinkle on top.
  • Bake at 350° for 10-15 min more.
