Spudnuts

Ingredients

  • Tbsp yeast
  • ½ cup warm water
  • 1 cup mashed potatoes
  • 2 cups scalded milk
  • 2 eggs well beaten
  • cup melted butter
  • tsp vanilla
  • 1 Tbsp salt
  • ½ cup sugar
  • 7-8 cups flour

Glaze:

  • 2 Tbsp butter melted
  • cup water
  • 1 lb powdered sugar
  • 1 Tbsp vanilla

Instructions

  • Mix well. Let rise.
  • On a floured surface, roll out dough to about ¼" thick.
  • Cut "spudnuts" by using a cookie cutter or the top of a glass. Place on a floured piece of parchment and allow to rise until about double in size.
  • Fry in a deep fryer approx. 1-2 min. on each side (depends upon on how hot your oil is). Place hot donuts on a paper towel.

Glaze:

  • Melt butter and add to warm water, add vanilla and then gradually add the powdered sugar.
  • Glaze the donuts while they are warm, but not hot.
