Spudnuts
Ingredients
- 2½ Tbsp yeast
- ½ cup warm water
- 1 cup mashed potatoes
- 2 cups scalded milk
- 2 eggs well beaten
- ⅔ cup melted butter
- 1½ tsp vanilla
- 1 Tbsp salt
- ½ cup sugar
- 7-8 cups flour
Glaze:
- 2 Tbsp butter melted
- ⅓ cup water
- 1 lb powdered sugar
- 1 Tbsp vanilla
Instructions
- Mix well. Let rise.
- On a floured surface, roll out dough to about ¼" thick.
- Cut "spudnuts" by using a cookie cutter or the top of a glass. Place on a floured piece of parchment and allow to rise until about double in size.
- Fry in a deep fryer approx. 1-2 min. on each side (depends upon on how hot your oil is). Place hot donuts on a paper towel.
Glaze:
- Melt butter and add to warm water, add vanilla and then gradually add the powdered sugar.
- Glaze the donuts while they are warm, but not hot.
