Marjean Thornock’s Oatmeal Cake
Ingredients
- 1½ cup boiling water
- 1 cup quick oatmeal
- ½ cup butter
- 1 cup sugar
- 1 cup packed brown sugar
- 3 eggs
- 1½ cup flour
- 1 Tbsp soda
- 1 Tbsp cinnamon
- ½ Tbsp salt
Frosting:
- ½ cup butter
- 1 cup packed brown sugar
- 4 Tbsp canned milk
- 1 cup coconut
- ½ cup chopped nuts
Instructions
- Pour hot water over oatmeal and set aside
- Cream together butter, sugars and eggs.
- Sift flour, soda, cinnamon & salt
- Add oatmeal to sugar mixture, and then add flour mixture. Mix well. Pour into greased 13×9 pan and bake at 350° for 30-35 min.
Frosting:
- In a saucepan combine butter, sugar and canned milk. mix together and boil for 1 min.
- Add coconut and nut.
- Spread over hot cake.
