Marjean Thornock’s Oatmeal Cake

Ingredients

  • cup boiling water
  • 1 cup quick oatmeal
  • ½ cup butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • cup flour
  • 1 Tbsp soda
  • 1 Tbsp cinnamon
  • ½ Tbsp salt

Frosting:

  • ½ cup butter
  • 1 cup packed brown sugar
  • 4 Tbsp canned milk
  • 1 cup coconut
  • ½ cup chopped nuts

Instructions

  • Pour hot water over oatmeal and set aside
  • Cream together butter, sugars and eggs.
  • Sift flour, soda, cinnamon & salt
  • Add oatmeal to sugar mixture, and then add flour mixture. Mix well. Pour into greased 13×9 pan and bake at 350° for 30-35 min.

Frosting:

  • In a saucepan combine butter, sugar and canned milk. mix together and boil for 1 min.
  • Add coconut and nut.
  • Spread over hot cake.
