Elsie’s Cake

Ingredients

  • 1 yellow or white cake mix
  • 3 eggs
  • ¾ cup oil or ½ cup oil and ¼ cup water
  • 1 11 oz. can mandarin oranges, juice and all

Topping:

  • 1 small pkg instant vanilla pudding
  • 1 20 oz can crushed pineapple
  • 1 8 oz. cool whip

Instructions

  • Combine cake mix, eggs, oil and mandarin oranges and mix on medium spead for 3 minutes, no longer.
  • Placed in greased and floured 9×13 cake pan. Bake at 350° for 28-33 min.

Topping:

  • Mix pudding and crushed pineapple together, fold in cool whip and frost cooled cake.
