Prime Rib Roast
Instructions
- Remove roast from fridge 2 – 3 hours before cooking to get it to room temperature. Set oven rack on lowest position and preheat oven to 200 degrees.
- Warm roasting pan on two stove top burners at med-high heat. Brown roast on all sides using a little oil. Place on a wire rack in a roasting pan. Salt and pepper generously.
- Place in the oven and cook until the internal temp. is 130 degrees (medium-rare). About 3 ½ hours. 30 min. per pound. 140 degrees is Medium Well. Let stand for 20 minutes before carving.
