Grandma Lybbert’s Chicken Salad

Ingredients

  • 1 cup grated carrots
  • 1 cup finely chopped celery
  • 2 hard boiled eggs chopped
  • 2 cups cooked chicken chopped
  • 1 cup mayonnaise
  • 1 bunch green onions chopped
  • 1 can Chinese noodles

Instructions

  • Combine all ingredients and refrigerate.
  • Just before serving, stir in noodles

Notes

This makes a great pita filling, I just omit the Chinese noodles.
