White Chicken Chili

Ingredients

  • 1 lb chicken cut into cubes
  • 1 medium onion chopped
  • tsp garlic powder
  • 1 Tbsp vegetable or olive oil
  • 2 cans Great Northern Beans drained & rinsed
  • 1 can chicken broth
  • 2 cans green chilies
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp cayenne pepper optional
  • 1 cup sour cream I have substituted cream cheese for sour cream and think I like it better
  • ½ cup whipping cream can use canned milk

Instructions

  • In large saucepan saute onion and chicken until done
  • Add remaining ingredients (except creams) and heat through.
  • Remove from heat and add 1 cup sour cream and ½ cup whipping cream.

Notes

I have substituted cooked cauliflower for the beans to make this a low carb ish. If using beans I usually add an extra can of beans and chicken broth.
