White Chicken Chili

Ingredients

  • 1 lb chicken cut into cubes
  • 1 medium onion chopped
  • 1 Tbsp olive oil
  • 3 cans great northern beans drained & rinsed
  • 2 cans chicken broth
  • 1 pkg zesty Italian dressing
  • 2 4 oz. cans diced green chilies
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp pepper
  • ¼ tsp cayenne pepper optional
  • 1 cup sour cream
  • ½ cup whipping cream

Instructions

  • In a large saucepan, saute onion & chicken until done.
  • add remaining ingredients (except creams) and heat through
  • Remove from heat and add sour crfeam and whipping cream

Notes

You can substitute 8 oz. cream cheese for the sour cream. You can also substitute cooked cauliflower for the beans. I have also used rotisserie chicken that is already cooked. When doing so, I still saute the onions.
