Updated Shepherd’s Pie

Ingredients

  • pound red potatoes cut into chunks
  • 3 large cloves garlic peeled
  • ¾ cup sour cream
  • ½ cup cheddar cheese
  • 1 pound ground beef
  • 2 tbsp flour
  • 4 cups frozen veggies broccoli, carrots, etc
  • ¾ cup beef broth
  • 2 tbsp ketchup

Instructions

  • Preheat oven to 375º F
  • Cover potatoes & garlic with water in a large saucepan.  Bring to a boil.  Reduce heat simmer for 20 min.  Drain.  Return to the saucepan with sour cream.  Mash.  Stir in ¼ c cheese.
  • Brown hamburger.  Stir in flour.  Add veggies, broth & ketchup.  Cook for 5 min. 
  • Spoon meat mixture over mashed potatoes.  Top with remaining cheese. 
  • Bake for 15-20 min.
