Tasty Cashew Chicken

Ingredients

  • 1 Tbsp peanut oil
  • dash of ginger or 2 slices of fresh ginger
  • 2-3 cubed chicken breasts
  • ¼ cup chopped green onions
  • 1-2 handfuls of Chinese pea pods
  • cup cashew nuts

Sauce:

  • 3 Tbsp water
  • 6 Tbsp soy sauce
  • 3 Tbsp sugar
  • 2 Tbsp cornstarch in a little water (add last)

Instructions

  • Heat peanut oil with ginger.  Add chicken and sauté until done.  Add green onions, pea pods, and cashews.  Sauté until done. 
  • Add sauce ingredients and then thicken with cornstarch mixture.  Serve over rice.  Can add other veggies like broccoli or peppers if you like.
