Tasty Cashew Chicken
COOK MODEIngredients
- 1 Tbsp peanut oil
- dash of ginger or 2 slices of fresh ginger
- 2-3 cubed chicken breasts
- ¼ cup chopped green onions
- 1-2 handfuls of Chinese pea pods
- ⅔ cup cashew nuts
Sauce:
- 3 Tbsp water
- 6 Tbsp soy sauce
- 3 Tbsp sugar
- 2 Tbsp cornstarch in a little water (add last)
Instructions
- Heat peanut oil with ginger. Add chicken and sauté until done. Add green onions, pea pods, and cashews. Sauté until done.
- Add sauce ingredients and then thicken with cornstarch mixture. Serve over rice. Can add other veggies like broccoli or peppers if you like.
