Tasty Cashew Chicken

- 1 Tbsp peanut oil
- dash of ginger or 2 slices of fresh ginger
- 2-3 cubed chicken breasts
- ¼ cup chopped green onions
- 1-2 handfuls of Chinese pea pods
- ⅔ cup cashew nuts
Sauce:
- 3 Tbsp water
- 6 Tbsp soy sauce
- 3 Tbsp sugar
- 2 Tbsp cornstarch in a little water (add last)
Heat peanut oil with ginger. Add chicken and sauté until done. Add green onions, pea pods, and cashews. Sauté until done.
Add sauce ingredients and then thicken with cornstarch mixture. Serve over rice. Can add other veggies like broccoli or peppers if you like.
