Taco Soup Recipe
COOK MODEIngredients
- 1 lb ground beef can substitute ground turkey
- 1 medium sweet onion chopped
- 1 red bell pepper can substitute 1 can diced green chilies
- 1-2 Tbsp Taco seasoning
- ½ tsp garlic powder
- 1 15 oz can black beans rinsed & drain
- 1 15 oz can kidney beans rinsed & drained
- 1 15 oz can pinto or white beans rinsed & drained
- 1 15 oz frozen corn
- 1 15 oz can tomato sauce
- 1 10 oz can mexican or spiced tomatoes
- 1 15 oz can diced tomatoes
- ¼-½ cup salsa
- ¼ cup chopped cilantro
- salt and pepper to taste
Instructions
- In large pot, add beef and cook over medium heat until done. Add onions and bell peppers and saute 3 minutes or until softened. Drain grease (if any) then stir in taco seasoning and garlic powder. Salt & pepper to taste.
- Add beans, corn, tomato sauce, tomatoes and salsa until combined
- simmer, stirring occasionally 20-30 min. Add additional water if soup becomes too thick. Stir in clinatro, salt & pepper to taste.
