1red bell peppercan substitute 1 can diced green chilies
1-2TbspTaco seasoning
½tspgarlic powder
115 oz canblack beansrinsed & drain
1 15 oz cankidney beansrinsed & drained
115 oz canpinto or white beansrinsed & drained
115 oz frozen corn
115 oz cantomato sauce
110 oz canmexican or spiced tomatoes
115 oz candiced tomatoes
¼-½cupsalsa
¼cupchopped cilantro
salt and pepper to taste
Instructions
In large pot, add beef and cook over medium heat until done. Add onions and bell peppers and saute 3 minutes or until softened. Drain grease (if any) then stir in taco seasoning and garlic powder. Salt & pepper to taste.
Add beans, corn, tomato sauce, tomatoes and salsa until combined
simmer, stirring occasionally 20-30 min. Add additional water if soup becomes too thick. Stir in clinatro, salt & pepper to taste.
