Sweet Macaroni Salad

Ingredients

In a large bowl and whisk together:

  • 3/4 cup mayo
  • 1/4 cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp red pepper flakes

Chop and add:

  • 1/2 cup sweet Gherkins 4-8
  • 3/4 cup red bell pepper
  • 1/3 cup celery
  • 1/3 cup red or sweet onion
  • 3 hard boiled eggs

Cook and drain

  • 8 oz pasta

Instructions

  • Mix pasta and chopped vegetables.
  • Stir in dressing

This recipe is from my friend, Pat Perrenoud who is one of the best cooks that I know.  
She added these notes to the recipe:
I usually double this recipe, instead of 8 oz of pasta, I use a pound.  You can add chopped ham, I don’t add cheese because it gets all gummy.
