Sam’s Favorite Chili
Ingredients
- 1½ lbs ground beef can substitute ground turkey
- 6 strips thick bacon
- 1 15 oz. can kidney beans drained
- 1 15 oz. can pinto beans drained
- 1 15 oz. can black beans drained
- 1 15 oz. can Fire Roasted Diced tomatoes with juice
- 1 6 oz. can tomato paste
- 1 red onion chopped
- 1 red bell pepper seeded and chopped
- 1 jalepeno seeded & minced (optional)
- 2 cups beef stock
- 1 Tbsp dried oregano
- 2 tsp ground cumin
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1 tsp smoked paprika
- 1 Tbsp worcestershire sauce
- 2 Tbsp chili powder
- 1 Tbsp garlic minced
Garnish:
- sour cream
- cilantro
- cheddar cheese shredded
Instructions
- In large pot, add bacon and cook until crisp, stirring often to cook evenly
- Remove bacon to a paper towel lined plate
- Add onions and peppers and cook until tender
- Add the meat and cook until browned
- Drain off any excess grease, we just tilt the pot and use a large spoon. (Sam likes to leave this grease in for flavor)
- Add all the remaining ingredients and 3/4 of the bacon and stir to combine.
- Allow to simmer on low for about 2-3 hrs. You can transfer to crockpot and simmer for 2-3 hrs on low.
