Poor Man’s Stew
Ingredients
- 1 large can tomato juice I've also used 2 smaller cans of tomato juice & add water)
- 1 lb hamburger
- 1 onion, chopped
- 1-2 cloves garlic
- 2 bay leaves
- 2 cans cream of mushroom soup
- little Worcestershire sauce
- 2 potatoes, peeled and chunked
- 1-2 carrots, peeled and chunked
- water
Instructions
- Brown hamburger, add garlic and onion.
- combine tomato juice, cream of mushroom soups, and 1 or 2 soup cans of water in a large stock pot.
- Throw in a dash or 2 or 3 of Worcestershire sauce
- Add hamburger, potatoes, carrots & bay leaves.
- Allow to simmer until vegetables are tender.

My really good friend, Jennifer, gave me this recipe under the title of “Hamburger Soup”. Abby loves it and started calling it “Poor Man’s Stew.” I usually serve it in homemade bread bowls. (I use Aunt Janene’s break recipe).
